ingredients
500 g blanched almonds and poached
1 pinch gum arabic powder
1 tsp baking powder
1 tsp butter
3 eggs
250g icing sugar
1 tbsp grated lemon zest
training
- Mix the almonds and mélangezz them with gum arabic, yeast, butter, 2 egg yolks (reserve the balnc), 1 egg, icing sugar and lemon zest.
- Knead just until smooth.
- Shape into small balls with almond paste, dip in egg then balnc a bowl filled with almond flakes.
- Place on a greased and cook a preheated oven at a medium temperature plate.
